HACCP - Hazard Analysis and Critical Control Points is a procedure intended to provide food security by identification and evaluation of the scale of risk of occurring threats in the course of all stages of production as well as food and food products turnover.
BRC (Eng. International Food Standard) –BRC standard was developed in Great Britain in 1998 by BRC organization to determine safety and quality norms in companies producing food delivered to supermarkets. The main parts of BRC standard are: HACCP system, ISO 9001, environment standard of the plant, control of production process, product control, personnel.
IFS (Eng. International Food Standard) –international safety standard regulating quality norms of food products delivered to big retail chains. A standard consists of four chapters: performance protocol, requirements catalogue, requirements for auditors’ organization and auditors, report. Such requirements are specified in five areas: higher management responsibility, quality management system (including HACCP), resources management, production processes, analyses and improvement. During certification according to IFS the auditor evaluates conforming standards in the tested company with requirements of good proactive recommendation.
